CRAB CAKE PO’ BOY

What do you get when you sprinkle a vegan crab cake with a po’ boy, and then take it on vacation in Mexico? An amazing burrito you won’t be able to put down! It’s a touch of tang meets creamy, underlined by a spicy sweetness. Because it never gets boring around here.

½ cup (25 g) chopped green onion

½ cup (76 g) chopped celery

½ cup (85 g) chopped red pepper

1 (14-oz [397-g]) can artichoke hearts (see note)

¾ cup (151 g) cooked or canned white beans (such as great northern beans), drained and rinsed

1 tbsp (3 g) fresh chopped parsley

1 tsp sea salt

¼ tsp ground black pepper

1 cup (60 g) bread crumbs (gluten-free if needed)

2 tbsp (28 g) Tartar Sauce Extreme

1 tbsp (15 ml) lemon juice

1 tbsp (15 ml) spicy brown or Dijon mustard

2 tsp (1 g) crushed red pepper flakes, optional

TO SERVE

4 to 5 tortillas

Shredded lettuce

Fresh tomatoes

Tartar Sauce Extreme

Hot sauce

Paprika
